I love this cake - I've used it twice now for Pickle's 1st and 2nd birthday parties, but wonder why I haven't used it more as it's delicious. It gets great comments from non-Vegans. We're not vegan ourselves, but Chaz pointed this recipe out as Pickle is allergic to dairy - THANKS!

Try this method. Put your eggs in the pot cold, turn on the heat, as soon as it comes to the boil remove the pot from the heat and let the eggs sit in there for 7-10 minutes (depending on size). Works like a charm!
